酸菜鱼始于重庆江津的江村渔船。据传,渔夫将捕获的大鱼卖钱,往往将卖剩的小鱼与江边的农家换酸菜吃,渔夫将酸菜和鲜鱼一锅煮汤,这汤的味道鲜美,于是一些小店便将其移植,供应南往北来的食客,重庆的厨师们又把它推向外地。
